Relatively guilt-free chocolate cake
June 11th, 2009
As a woman who thinks a day without chocolate is like a car without petrol - ie, pointless and going nowhere - I was thrilled beyond words to fall upon this recipe for lower-fat chocolate cake. I mean, obviously, it’s not calorie-free and it involves cake mix which I normally only allow in the house if it has a King Arthur Flour logo on it, but it is deeee-licious, especially with strawberries at this very strawberry time of year.
Not so Devilish Food Cake
Take one devil’s food cake mix (OK, so Betty Crocker…).
Add 1/2 cup of cocoa
2 egg whites
1 whole egg
1 and 1/3 cup of water
1 cup of fat-free yoghurt
Beat for three minutes then pour into a bundt mould and bake for about 40 minutes at 180 degrees C (or 350 F) - or until a cake tester comes out cleanish. Cool for ten minutes then turn out, and sprinkle with icing sugar.
And then fill the centre with whipped cream and chopped strawberries, and serve on a glass cake stand. Raspberries would also be yum, come to think of it, especially if you dug out a trench in the tube cake and filled it with a creamy-berry mix. [goes off to investigate kitchen cupboard]
