Here in Apple Country, it is humid and raining, and the Wimbledon Final wasn’t quite what we were hoping for (well, actually, it was for me - I love Roger Federer, who is Melissa Romney Jones’ ultimate dream boy. He even married his lovely curvy girlfriend! Swoon) What’s needed on a grey day like today is nursery comfort food… like rice pudding.

However, a quick check of the store cupboard revealed a disappointing lack of pudding rice. Nuts. An ever quicker check of the internet revealed the illuminating news that you can make rice pudding with risotto rice!

Risotto pudding

1/4 cup caster sugar
1/2 cup arborio rice
1/2 vanilla pod
4 cups milk
3/4 teaspoon almond essence (optional)

Mix the sugar and rice and vanilla pod with the milk.
Bring to a boil, then simmer for 40 minutes or until the milk has been absorbed, stirring all the while to stop a skin forming or the rice sticking. Add the almond essence, then either chill and eat with raspberries, or dollop some jam in the middle and eat warm.

Ah. Sunday night’s feeling better already…
